This Week’s Menu…

Here’s what’s on tap for the week ahead in case you’re looking for some healthy meal inspiration:

Breakfasts:

–  Rudi’s english muffins with sunflower butter 

–  Decaf, iced, cold-brew coffee with vanilla coconut milk

Lunches:

Mark Bittman’s Quinoa & Mango Salad (from Food52)

–  Sausage & White Bean Casserole (from the PBP meal plan)

–  Vegan Enchiladas with Cilantro Cream (via Oh She Glows)…I made these last week and I’m making them again. So good!

Mar-a-lago Turkey Burgers (via Bread & Wine and O Magazine)

– Maple Glazed Salmon with Pineapple (via Real Simple) with roasted broccoli on the side.
