Healthy Cinco De Mayo Recipes

In honor of Cinco De Mayo I’ve compiled a Pinterest round-up of some of my favorite health, Mexican-inspired recipes.

I LOVE Mexican food because you can throroughly indulge while still keeping it fresh and light. I enjoy it multiple times per week:)

Topping the charts is my Fresh Citrus Skinny Margarita. The holiday wouldn’t be complete without a margarita in hand. This one will satisfy your tastes without a bunch of added sugar.


I LOVE this goat cheese & black bean dip. It’s a perfect party appetizer and is great served with multigrain chips, sliced veggies or pita chips.

Another black bean favorite. Black Beans With Roasted Tomatoes & Feta. To. Die. For. A great side dish to go along with tacos, enchiladas or fajitas.


While not exclusively Mexican these Goat Cheese Stuffed Peppers are a crowd pleaser. The vibrant colors would look perfect in a Cinco De Mayo-themed party spread.


I haven’t tried these Roasted Vegetable Enchiladas but I think they look delicious…


There’s nothing better than fresh homemade salsa. This one is on my list to try and it comes together in just 5 minutes…
