Healthy Berry Coconut Smoothie Pops

As a mom, I’m always looking for creative ways to sneak more nutrients into my children’s diet. Smoothies are an easy option, but my kids tend to get bored easily so the novelty of a new smoothie quickly wears off. 

Enter…homemade popsicles!

Healthy and Easy Popsicle Recipe from The Balanced Life

Homemade popsicles are not only healthier than store-bought options, they also provide the perfect vehicle for filling your child’s diet with healthy, nourishing foods in a way that feels like a treat!

In today’s YouTube video, I’m sharing one of my favorite homemade popsicle recipes, Berry Coconut Smoothie Pops, made with only a few ingredients. 

  • 2 cups frozen berries (any will work)
  • 1.5 cups full-fat coconut milk
  • 2 tbsp pure maple syrup
  • 1 scoop collagen powder (optional, but you can find my favorite collagen powder here!)

Blend all together, pour into molds, and freeze!

    We make these every night with left over dinner smoothies (lots of greens and Greek yogurt, berries and banana, and whole milk). I love that it is a cool treat for the afternoons that are giving them some protein to help them make it to dinner without the meltdown that often occurs right when I am cooking. And the amount of spinach you can pack in without compromising taste is really impressive.

    What kind of molds do you use? We currently have plastic ones (BPA free of course), but I have been wanting to upgrade to something plastic free but haven’t looked into it yet.
